Start my cheese making endeavours soon. Really looking forward to it, is really price effective for certain cheeses and meh for others.

The 2 I am most interested in are, 1kg Mozerella from 8l milk (eat instantly!) Like this stuff, the real deal.

 1kg is over $40 at supermarkets.

& 1kg Parmesan from 8l milk mmmmmmm but it does take over 9 months to mature. Which again would cost over $40 to buy.
 You make a big solid wheel of it, mmmmmmmmmmmmmm

The return for camembert is the same at 2 months of aging, not really sure what that costs.

Raw/real milk is proving much harder to find than I thought, I really figured in Canterbury it would be a piece of piss.

Raw milk is dangerous (as I understand) due to still having nasties in it (bacteria etc) and only very rarely can be found over the counter. Go to an organic food place and ask. We have a place in town called Moreish which specializes in artisan/organic goods who sell raw milk via a business card on the counter, they wont actually stock it because they can be held liable if you get ill from it.

Oh I would so pasturise it myself before making cheese, but raw milk is meant to be the beeeeees kneees for taste in cheese, especially if you know you are getting it from nice Jersey cows, grass fed only. Nice fatty creamy milk.... mmmmmmmm

Bocconcini is probably more the style I am making. Stupidly easy Rii, so yeah, 1 kgish from 8l milk, pot to tummy on the same day.

This is the easiest way to start off. Has all you need, just add milk/time and a kitchen.

I've been told fontera controlled dairy farms (like 99% of dairy farms in NZ) is a closed loop, teet to truck, no way to pour off. No idea if it is true or not.

I think its more the level of automation they are using now. The company I work for do a lot of their automation of their milk processing plants, and the actual plant is designed to be a pretty closed off area, with it all controlled from a operator room. I can imagine they have similar stuff in place for the milking, so the stuff has 0 chance of being spoiled/contaminated.
