What customers do is that they will load up on far more they can eat, thus it's a waste of food. Due to the increase, it'll actually cause the chefs to have to cook more.
Also it introduces cross contamination of food as some people are utter fail coordination and logic wise and will spill parts of some dishes onto other dishes via the utensils and use say, the same utensils across multiple dishes. Not only does it create a mess, making the food much less appetising, it's also unhygienic. If the pricing system is a set price, it disadvantages people who only want a little. If the price system is on a per weight basis, it disadvantages those who 'pick wrong' like loading up on the sweet and sour pork and grabbing more of the sauce than the actual meat and the human nature of seeing the words 'self serve' and loading up on as much as they can thus paying for wasted food.

Serve service is fine with say smaller, individual items like deep fried items that you cannot cross contaminate with other dishes.
Also remember of course that malls, particularly in a food court setting, carry a large premium rent wise. I'm sure I've missed out other points that haven't came up at the top of my head.

but no, having been in the food industry in this town all my life and my family knowing the market and having business connections...
Knowing people in Colliers International goes a long way in this town (cuz they basically literally own a good chunk of it).

I'm curious. If I had diabetes, and had to have my leg cut off. Could I legally take the leg home and eat it? I can understand of the 'biohazard' and disposal of the leg, but what if I could get the bone taken out at the doctors and take home the skin/meat? Could I legally do it? It's my fucking leg.

The leg (well, the foot really.) would be infected with gangrene. I'm pretty sure you don't lose your whole leg, just the infected area? You could always cut the rest of the leg off at home, then chuck it in the freezer?
